Key Lime Bars

Lately, one of my cravings has been key lime pie. I'll buy an entire frozen pie and sneak a slice on nights I just want some. The other night I wasn't at home and didn't want to spend so much for a pre-made pie. While looking through key lime recipes, I stumbled upon key lime bars. Heaven! Let me tell you! They are just as good! And they are oh-so-easy too! They're perfect with whipped cream, and even better the next day! Here's how you make them:

Key Lime Bars

*1 1/2 cups graham cracker crumbs

*3 Tbs melted butter

*1 package cream cheese,8oz,softened

*1 can sweetened condensed milk

*1/4 cup lime juice(about 4 limes)

*1 Tbs grated lime peel


Pre-heat oven to 350°. Grease square pan for 8 thick bars or 7x11 pan for 12 thinner bars(I recommend the latter, or else doubling your batch if you want thick bars but more of them). Mix cookie crumbs and butter with fork. Use fork to press crumb mixture into greased pan. Refrigerate pan until time to add lime mixture. Beat cream cheese until light and fluffy. Gradually mix in condensed milk. Beat in lime juice and lime peel. Bake for 35 minutes and let cool for 30 minutes. top with powdered sugar or whipped cream.

  1. YUMMY! I craved/still craving cheesecake since having my last baby. I was eating so much of it that I started gaining weight instead of losing the baby weight. I have to force myself not to buy it anymore. These look really good, I might have to try this recipe out!
