Bits of Sweetness: Scalloped potatoes

I love good comfort food. There is something about it that is so soothing to the soul. Scalloped potatoes are definitely one of those dishes. I wanted to make some, but didn't want to make it from a box, so I found a great recipe and thought I would share it with you. 

Scalloped Potatoes with Ham
                    *6-8 medium potatoes, peeled in thin slices
                                    (leave the skins on if your family doesn't mind it)
*1 onion, chopped finely       
                                           *1-2 TBS onion powder (if you choose to omit the onion,
                  that is fine.)                                            
*2 cups mild cheddar cheese
                          * 1 cup shaved or grated real parmesan cheese
                        (it's even better if you go for the real stuff!
                                            Look in the refrigerated section at your grocery store)
3 slices provologne cheese, torn into pieces
                                                           *2 cups of cooked ham, cubed
          (If I don't have any ham on hand,
                       I'll just get three thick slices from the deli
                           *1 1/2 c.milk  (I used 2%)                                
             *2-3 TBS flour                                  

  Preheat oven to 375 degrees. Spray 9x13 baking dish with baking spray. Mix milk, onion powder, flour, salt and pepper in a mixing bowl. Pour enough of the mix over the 1st layer to wet. Spread enough of the cheddar, parmesan, provologne cheese, and ham to cover 1st layer. Continue to alternate potatoes, liquid, cheese and ham. Top the final layer with lots of cheese. Bake at 375 degrees for 45 minutes-1 hour.

*Note: if you only have cheddar cheese on hand, you can also add an undiluted can of cream of mushroom soup to it to add some flavor.  Feel free to experiment with veggies! It would be good with broccoli in it too!
