Bits of Sweetness: Easter a coming!

Easter a coming!

True story: I just realized yesterday that Easter was on Sunday.
Ahem.
yeah....
:)
Even with celebrating Palm Sunday this past Sunday I guess I just didn't connect the dots?
Blame the pregnancy brain ;-)
And too not having a big huge family dinner with the grandparents under the weather this year. :(

So guess what? I get to host Easter for the first time for our immediate family.
And, quite honestly, I'm looking forward to it!!!
(Our family is pretty easy-going.)

On our menu:
  • Oven-baked ham with this amazing pineapple glaze (try it! You won't regret it!)
  • Potatoes (probably scalloped or mashed)
  • Crockpot creamed corn (recipe below. I haven't made a blog post on this yet! But will after I get pictures this year!)
    Ingredients:
Three 16 oz bags frozen sweet corn
    11 ounces cream cheese
    3TBS water
    3 TBS milk
    2 TBS sugar
    1/4 c. butter
    6 slices american cheese
Directions: Cube & mix in cream cheese, butter, & American cheese with rest of ingredients. Cook on low 4 hours in crock pot. Stir several times & add more water if needed while cooking.
  • Rolls
  • Crispy parmesan asparagus (I'm not a huge asparagus fan and it still looks good!) Recipe here

  • And, of course, jello eggs :)
What's on your menu?

I have years of wonderful Easter memories- waking up to Easter baskets, sunrise breakfasts at church, dying Easter eggs, delicious meals together, and always, the egg hunt! It is unreal to be grown up now and responsible for creating memories for our son now! I love it though. This year we're trying something new with the egg dying (did you know you can use kool aid to dye eggs? No vinegar-smell!!) as well as some other fun things (some of his Easter eggs just might have teddy grahams and rainbow goldfish in them! Who says you have to stick to just candy?! ) Most of all though, I am looking forward to celebrating time with family and having a Best Friend who conquered death and loves me unconditionally. Life has so much more meaning because of what Jesus did. Who else would do that? Only Him.

Favorite song on my mind

Happy Easter! What are you doing (and eating?) this year that you're looking forward to?

Pictures to come from the day later since this post is early :)

  1. An Easter tradition at my house is Resurrection rolls. They are something that my mom found years ago and they're pretty easy. It's basically roll dough and a marsmellow. The actual recipe calls for cinnamon and stuff too but I've never made them that way. It' is a recipe from Rhodes and my iPod is not letting me link the web page. But It's www.rhodesbread.com and they are called Easter Morning Rolls. I hope you try them!

I definitely feel like Easter snuck up on us this year...I can hardly believe it's already April, geez! My hubs and I just moved across the country in January, so this will be our first holiday by ourselves. It's a bit sad, but I'm also pumped to start our own new family traditions (for example, I'm planning a super cool Easter picnic in the park!). Hope your first time hosting goes well!

  3. Sounds like great Easter plans! We always do our own Easter morning of the egg hunt around the house, the baskets, and for breakfast our dyed easter eggs and something sweet like cinnamon rolls. For dinner were heading over to my moms whose actually doing a turkey dinner this year instead of ham. HAHA shes hoards turkeys during the holiday sales and one is still taking up room in her freezer so she decided that's Easter dinner this year which I can't complain sounds yummy and J doesn't care for ham much anyways.
