Chocolate Custard

Would you believe me if I said this only had three ingredients? Really. It does.
And they are all very good for you too!
I've seen this idea floating around on Pinterest (where all great ideas start, right?!)
to make custard out of simply bananas. I wanted to try it. But, slight problem:
My frozen bananas were rock-hard from being lonely and forgotten in the freezer
and much too hard to blend just by themselves (at least for my blender!)
The tweaked end result was delicious though. It tasted just like thick,rich ice cream.

Chocolate Custard
2-3 over ripe bananas, cut into bite-sized pieces & frozen
1/2 c. coconut milk
 1/4 c. cocoa powder
optional: 1 TBS vanilla

Add all ingredients to blender and pulse for 20 seconds,
mixing the top to the bottom each time to blend it all well.
 Blend until smooth and creamy.

(This melts quickly so feel free to store in the freezer until ready to eat!)
*Just a tip: You can take the waiting game out of
 ripening bananas by microwaving them, unpeeled, for 30 seconds-1 minute!*
Peanut butter is another yummy ingredient to add! I wanted mine more tropical though with 
the coconut milk & just let it be!
