Donut Muffins

Don't let the name fool you. These babies aren't dripping with a sugary glaze (wouldn't that be quite the donut?! I'm sure that sounds really good to some of you though! ;-) They simply share the trait of being dipped in cinnamon and sugar like some yummy donuts are. My mom used to make these in my growing up years. I have fond memories of waking up Saturday or Sunday mornings to these coming fresh out of the oven, just waiting to be eaten! 
I have had several ask for the recipe so I thought I would share it!

Donut Muffins
Ingredients:
3/4 c. sugar
1 egg
1/4 c. vegetable oil
3/4 c. milk
1 tsp. vanilla
1 1/2 cups flour
2 teaspoons baking powder
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
 

Topping
2 TBS melted butter
1/2 c. sugar (they suggest superfine but I just used regular)
 
1 TBS cinnamon

Preheat oven to 350 degrees.
Lightly grease a muffin tin with vegetable oil or spray.In a large bowl, beat together sugar and egg until light in color.
Add vegetable oil, milk, and vanilla to sugar mixture and combine.
 
In a separate bowl, combine flour, baking powder, salt, and cinnamon. 
Then pour into liquid mixture and stir to combine.
Fill muffin cups 3/4 full, and bake in greased muffin tins
for 18-20 minutes, or until a tester inserted in the middle comes out clean.

Melt butter in microwave-safe bowl.
In another bowl, combine the cinnamon & sugar.
While still warm, dip muffin tops in butter, and then in the sugar mixture.
Allow to cool, then enjoy! 

Makes 12 regular muffins or 2 pans of mini muffins 

We sure enjoyed these today! I decided to make mini ones for the kids
and they turned out to be the perfect bite-sized snack!
The mini ones would be great for a picnic or potluck!
Just be forewarned that they will be gone in no time
so you may want to double the recipe!! :)
